Morelia, Michoacán.- If you’re from Michoacán, you’ve almost certainly tasted pasta ice cream and walked through the squares of Pátzcuaro enjoying its flavor, but why is it called that? We’ll tell you all about it here.
The raw material of this famous ice cream is the jamoncillo de leche, something like a cajeta sweet, which when made in copper saucepans forms a paste, hence the name.

The traditional pasta ice cream began as carafe snow, handmade and over the years more than 90 flavors were added equally made in an artisanal way, such as zapote, mamey, chongos among many others.

This delicious dessert has been created for 109 years and its inventor was Mr. Agapito Villegas; today it is one of the flavors that characterizes the magical town of Pátzcuaro and is internationally recognized.
“There are more than 90 years of tradition in the family, of 4 generations that have taught us, for example my grandmother learned at the age of 12, said Carlos Cázares proudly.
