All while the award-winning European Restaurant was being remodeled, which would reopen in March.
But everything changed, the partners say, due to the Covid-19 crisis and had to reinvent themselves by a delivery model with a fine-cuisine sushi menu, under the creative hand of award-winning chef Francisco Mandiola, who has been applauded by those who have enjoyed it in their homes, achieving more than four thousand orders since they started with the modality.
“Every day it is more difficult to get suppliers in this pandemic with quarantine, but we have still managed to have the best in the possible way to be able to get a good product to our customers’ homes,” Mandiola says.
Inside the sushi menu, a good option is truffled salmon roll ($10,900), with rice and that comes wrapped in flaming salmon, macerated in truffle oil, wasabi, soya and a shot of yuzu. The filling is salmon, shrimp, avocado and a touch of toasted almond and coriander leaf.
