Michoacan. – The Festival of bread and empanada, based in the tenure of El Habillal, belonging to the municipality of Lázaro Cárdenas, will have its second edition on October 28 and 29 of this year, in the main square of the tenure.
Angelica Escobar Ortiz is part of the festival committee, she is one of the person who had the idea and creativity of creating the bread festival, she mentioned that last year four bakers from the area participated, where despite being the first year of this festival, expectations were exceeded, since there were many people and the bread ran out.
For this edition, in addition to the four local bakers who participated last year, the invitation will be made to neighboring communities to participate in this year’s bread fair, on Saturday 28 at four in the afternoon will be the inauguration, will continue on Sunday at eight in the morning and will end at nine at night, of the same day.

Within the festival there will be workshops to make bread, to try to preserve this tradition, last year there were several universities participating, but it is open to anyone who is interested in this traditional trade.
It will also have cultural events and traditional Mexican games, encouraging coexistence and keeping young people away for a moment from electronic devices, as for other foods, traditional local food will be sold, such as tamales nejos with mole, atole, pozole and frito.
One of the participants of the festival, Mrs. Petra Chávez Nieves, 77 years old, has been involved in the art of making bread since she was 30 years old, before starting as a baker she worked in the field, since it was what was the option at that time.

He started working as an assistant for several years, later he managed to build an oven in his house, with which he is already more than 25 years old and be able to have his own bakery, Mrs. Petra commented, that her favorite piece since she was a child is the classic sugar shell.

One of her sons had an interest in making bread and worked for some time in the family business, but in the end, she decided to retire, before this Mrs. Petra thought about closing the bakery, but her daughter, Petra Regalado Chávez, decided to continue her legacy, now she is the owner of the place and who runs the bakery.

The famous Habillal empanada, is the creation of Mrs. Petra Chávez Nieves, who thanks to this was able to raise her thirteen children and is the bread that sells the most, the cost of this is $ 17 pesos, while the rest of the bread costs $ 10 pesos.
For the production of the empanada, they explained the process that has to be carried out, which begins a day before, since the flour, yeast, salt, sugar and butter have to be stirred, everything is left ready to fluff, then at 4 in the morning the next day they get up to shape the bread, The bun is spread and the fruit is added, to finish the shape of the empanada is made and put in the oven.
The empanadas are coconut, sweet potato and atole, while the horns of Nutella, blackberry, cheese with ham, cajeta and coconut, before the arrival of new generations, comment that they are open to the new flavors that people ask, to please all their customers.

Finally, they mentioned that they have customers from various parts of the Mexican Republic and some from Los Angeles, California, which take several empanadas to their relatives in the United States.
