Today, Ash Wednesday, Lent begins, the liturgical period for purification, reflection and spiritual conversion, which ends on Holy Thursday and sets the tone for the Easter period.During the next 40 days, starting today, the consumption of fish and seafood also increases, especially among the Catholic faithful who are accustomed during this period to set aside red meat, which automatically generates an increase in seafood every year. Lent is, perhaps, the season of the year in which there is greater demand for fish and seafood, but on this occasion, according to vending businesses in the capital of Sinaloa, there is a shortage of scale, while shrimp registers prices that exceed 200 pesos per kilo, coupled with a slightly more sought-after species, like salmon, they are around 400 pesos per kilogram, depending on the establishment or supermarket.
